About the role

Calvary  Hallam is a warm and home-like residential aged care home in  Hallam providing leading aged care services with excellent lifestyle options and therapeutic support. We are looking for a Head Chef to join our team. The Head Chef is responsible for managing the kitchen/food services for  Hallam, including menu plans and food preparation, ensuring a high quality service is provided to residents. 


Key Responsibilities

  • Prepare and cook all meals and snacks according to the menu and as requested by the Manager
  • To ensure, as much as possible that residents’ individual needs for food services are met
  • To attend the Residents’ Meeting as requested to discuss menu/food issues with the residents’ group
  • Work with residents and consultant dietician (when appropriate) to plan a four week cycle menu to meet residents’ needs and standards
  • Order stock as required, maintaining an inventory of stock and ensure that stock is rotated to ensure freshness

What you bring 

  • TAFE Hospitality (Commercial Cookery) or Certificate Level III in Food Studies (or working towards). 
  • Experience in bulk cooking and food preparation.
  • Knowledge of nutritional requirements.
  • Ability to plan menus to meet standards e.g. Food Act and Occupational Health and Safety.
  • Ability to order food to meet requirements of menu cycle and keep within budget.
  • Understanding of infection control and safety principles.
  • Good communication skills and understanding of the needs of elderly people.
  • Ability to safely operate kitchen equipment, e.g. stoves, ovens etc.
  • Completion of HACCP Food Safety Program
  • A desire to join a team committed to the care of others in a mission based organisation
